Why are you insisting to change after the movie has started?
If the movie starts correctly in the correct ratio, wouldn't that be preferable? So that's why I pointed to those options!

You can define playlist defaults (i.a. default Aspect ratio) under:
(rightclick >) Options > Preferences > Playlist.
If you use Old style playlist you can also define for each individual movie....
