If iTunes needs QuickTime maybe it only needs the QuickTime filters, so QuickTime Alternative should be enough.
Otherway you can set BSplayer as default player by registering the extensions you want to be played in BSplayer in BSplayer preferences (CTRL+P -> File types -> Select the extensions you want, and maybe also the option "Register extensions on player start")
Then go in QuickTime preferences. Select "File types" tab and uncheck all the extensions you want to use in BSplayer. Then disable also the "Notify if other applications modify these associations" options in the same tab.
