Editing .srt sub files
 
Is this possible so that just (for example) only the German spoken parts will show up as subs? I would like to try this on "The longest Day" if it's possible. If so, could one of you experts give this neophyte some instructions on how?

.srt (Subrip text) subtitles are text based files, which you could even edit in e.g. Notepad.
However, you can do what you want easier with a simple subtile-editor like e.g. SubSync.
Just remove all non-German subs and save the file.

you should subtitle Workshop for that kind of thing....
you'll have to remove in manually, so I'd check if there are any germanOnly subtitles first.....
